Crispy Oven Baked Cauliflower Tots: for People Who Hate Cauliflower

Like cilantro, you either love it or hate it.  I’m talking Cauliflower!

Personally, I don’t know many people who don’t like Cauliflower, but I’ve seen the loathing online when it comes to this nutritious vegetable!  Cauliflower is one of several vegetables in the species Brassica oleracea family which also include broccoli, Brussels sprouts, cabbage, collard greens, and kale. The milky, sweet, almost nutty flavor of cauliflower is prime from December through March when it is in season and most plentiful. Raw cauliflower is firm yet a bit spongy in texture.

Cauliflower is an excellent source of vitamin C, vitamin K, folate, pantothenic acid (B5), and vitamin B6 (pyridoxine). It is a very good source of choline, dietary fiber, omega-3 fatty acids, manganese, phosphorus, and biotin. Additionally, it is a good source of vitamin B1 (thiamine), B2 (riboflavin), B3 (niacin), proteins, and potassium. Cauliflower is an excellent addition to family meals and most recently, has been playing a huge part in people looking to lower refined carbohydrates out of their diets.

Cauliflower is being used to make a healthy pizza crust, taco shells, fried “rice” and now Tater Tots.. only no Tater!

Today, I’m sharing one of my favourite ways to serve cauliflower that could very well fool any cauliflower hater out there!  These delicious Oven Crispy Baked Cauliflower Tots are very easy to make, healthy, and delicious!

Oven Crispy Baked Cauliflower Tots

All you have to do is coarse chop the head of cauliflower, pulse it in your food processor, Combine the rest of the ingredients, form them into the shape of little tots and bake!

Bake them in the oven for 15 minutes, flip and cook for an additional 10 minutes.  I like to leave mine in just a little longer because we like them extra crispy!

Oven Crispy Baked Cauliflower Tots

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 39 minutes

Ingredients

  • 3 cups finely chopped cooked cauliflower (about 1 medium head of cauliflower)
  • 1 cup Italian seasoned panko bread crumbs (be sure they are seasoned)
  • 1 cup shredded cheddar cheese
  • 2 eggs

Instructions

  1. To prepare the cauliflower, chop and boil florets until soft. These can be larger pieces of cauliflower no need to make them too small.
  2. Once slightly soft, drain and finely chop with a knife, or pulse a few times in a food processor until it resembles large course crumbs.
  3. Add the 3 cups of chopped cauliflower, breadcrumbs, cheese and eggs into a large mixing bowl. Mix with a large spoon until everything is combined.
  4. Preheat oven to 400F. While oven is preheating, shape cauliflower mixture to form small cylinders that look like tater tots. Make sure to first press the mixture together between your palms before shaping, so that the ingredients stick together better. Place on a baking sheet lined with parchment paper.
  5. Bake for about 15 minutes and then flip tots over and bake for another 10 minutes. If your tots are larger, you may need to bake longer so that they are crispy.
  6. Serve with ketchup or other dipping sauce. Enjoy!
